Yields 10 servings

For the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Drink (produces 850ml, to serve 10)

100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

For the Cordial: Place every components inside a pan, bring to a gentle boil, mixing to dissolve. After that, take off the heat allowing it to cool down entirely. Transfer into a sterilised bottle, seal and store chilled, it will last for up to one month.

For the Premix: Mix all the liquid ingredients in a sizeable container, allow it to infuse for an hour, then strain best through a fine cloth, to ensure it's fully clarified.

When ready to serve: Measure 85ml of the premix into a cocktail shaker filled with ice, gently stirring gently for one minute until cold. Strain to a chilled martini glass or similar, garnish with a few cranberries and complete it by giving it a light spray of the essential oil above the glass.
